We did operate a few hot food vending machines in our vending operation.
In most cases we would place a few microwaves in the lunchroom and then install a sandwich/hot food or vending machine. In my opinion, these machines never made us money. They require a careful eye on the product expiry dates and the spoilage is higher than most types of vending. The selection of product was also limited in our area. So why did we do hot food vending? Simple. Many of our best locations demanded that we offer so sort of hot food vending for them. We would put in a hot food vending machine and microwaves and put up with the extra work because these were usually high volume accounts. We would make a huge profit on the high volume in the coffee/bottled water/snack/cold drink machines because of the high volume.
We always looked at the break even status of hot food vending as a cost of doing business. Without offering these locations a hot food vending machine we would never been able to obtain them.

If you are considering buying an electronic machine make sure it is has "multi-price" capable. Being able to offer different pricing in snack and soda machines allows you more flexibility in product selection (and profits).
